The Bishop�s Lodge Ranch Resort and Spa, a Platinium Choice Award Winner and Historic Hotels of America is looking for an Executive Chef.

Basic Purpose: Directs and coordinates activities of the Kitchen department for our restaurant/lounge, pool bar, conference/banquet center. Maintain established Freeman�s 4 Diamonds operational standards
preparation of all food for the resort in a safe, sanitary work environment and achieves profitable, competitive, quality products.

Essential Functions: (include but not limited to)
Inspects and tastes prepared foods on a daily basis to ensure quality ingredients, good presentations and recipes following Freeman�s 4 Diamonds operational standards.
Plan and manage the procurement, production, preparation and presentation of all food in the resort in a safe, sanitary cost effective manner.
Monitor and control the maintenance/sanitation of kitchen, equipment and related areas to ensure a healthy, safe work environment which meets/exceeds federal, state, corporate
standards and regulations.
Develop, recommend, implement and manage the department�s budget; continually analyze, forecast, monitor and control the labor and food costs through various methods to meet/exceed management/budget objectives.
Ensures the kitchen department is in compliance with all federal, state and local laws, including OSHA, EEOC, Wage Hour and health laws.
Follows company policies and procedures and is able to communicate them effectively to subordinates.
Manage the kitchen staff in order to attract, retain and motivate the associates while providing a safe environment; hire, freeman�s training classes, develop, empower, coach
and counsel, conduct performance and salary reviews, resolve problems, provide open communication vehicles and discipline as appropriate.
Develop and implement menus and back-up within corporate guidelines to continually improve revenues and profit margins while maintaining quality. To include seasonal, monthly and daily
menus; all menus reciped and costed. These menus will be for our restaurant/room service for breakfast, lunch and dinner. Also for our lounge - light meal and pool bar. In the catering dept.menus will be
for regular catering,menus, wedding menus and customizable menus.
Formulates short term and long term operational plans for the kitchen department.
Communicates all regarding restaurant and banquet kitchen information to the Food and Beverage Director on a daily basis, including up-to-date staff information and food cost.
Prepares the annual resort budget for the kitchen operations.
Provides a professional image at all times through appearance and dress.
Responds quickly to guest requests in a friendly manner. Follows up to ensure guest satisfaction.
Conducts regular food meetings, providing objective and constructive feedback to the associates.
Takes time to listen to associate concerns and deals with any challenges in a timely manner.
Effectively holds training classes for all food associates to effectively train on safety, proper procedures and food service guidelines.
Maintains constant communication between departments and keeps other departments informed about special programs and events.

Qualifications: Education/Experience: High School diploma or equivalent. A minimum of five to ten years food and/ or hospitality related work experience required.
Special consideration will be given to those who exhibit exemplary performance. Prefer culinary degree and ACF, CEC acreditation
Certification and/or License Requirement: Food service certification/permit as required by local or state government agency.
